Corn tortilla omelet
2 eggs
2 corn tortillas
onion
salt
pepper
hot sauce
cheese, strips or grated
Cut the corn tortillas into strips about 2 inches long and 1/4 inch wide. Saute the onion and tortilla strips in olive oil. Beat the eggs with salt, pepper and hot sauce. Gather the onion/tortilla mix in the center of the skillet. Pour the egg over the onion/tortilla mix. After a while, turn the "pancake" over. Spread the cheese over the top and continue heating until the cheese is melted.

Egg and Tortilla
2 eggs
2 corn tortillas
salt
pepper
Brown 2 corn tortillas in a frying pan. Crack one egg on each. Sheppard the egg so it stays mostly on top of the tortillas. Turn once and serve sunny side up.
